This shrimp carbonara recipe combines creamy pasta, tender shrimp, and a rich sauce made with eggs and Parmesan. It’s quick, indulgent, and perfect for dinner.

Ingredients

  • 12 oz spaghetti or linguine
  • 1 lb shrimp, peeled and deveined
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream (optional)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • 1/2 cup reserved pasta water

Instructions

  • Cook the Pasta: Boil the spaghetti in salted water until al dente. Reserve 1/2 cup of pasta water.
  • Prepare the Shrimp: Heat olive oil in a skillet, sauté garlic, and cook the shrimp until pink. Set aside.
  • Make the Sauce: Whisk eggs, Parmesan, and cream (if using) in a bowl.
  • Combine: Toss cooked pasta and shrimp in the skillet over low heat. Slowly add the egg mixture, stirring to coat. Add reserved pasta water as needed for consistency.
  • Season and Serve: Season with salt and pepper, garnish with parsley, and serve immediately.

Notes

  • For a traditional carbonara, omit the cream.
  • Serve with garlic bread or a side salad for a complete meal.
