12 oz spaghetti or linguine
1 lb shrimp, peeled and deveined
2 large eggs
1 cup grated Parmesan cheese
1/2 cup heavy cream (optional)
2 tbsp olive oil
2 garlic cloves, minced
Salt and black pepper to taste
Fresh parsley for garnish
1/2 cup reserved pasta water
Instructions
Cook the Pasta: Boil the spaghetti in salted water until al dente. Reserve 1/2 cup of pasta water.
Prepare the Shrimp: Heat olive oil in a skillet, sauté garlic, and cook the shrimp until pink. Set aside.
Make the Sauce: Whisk eggs, Parmesan, and cream (if using) in a bowl.
Combine: Toss cooked pasta and shrimp in the skillet over low heat. Slowly add the egg mixture, stirring to coat. Add reserved pasta water as needed for consistency.
Season and Serve: Season with salt and pepper, garnish with parsley, and serve immediately.
Notes
For a traditional carbonara, omit the cream.
