  • 2 lbs ground beef or cubed chuck roast
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 1 packet Carroll Shelby Chili Kit (or homemade spice blend)
  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp masa harina (for thickening)
  • Optional: 1 can (15 oz) kidney beans (for non-Texas style)

Instructions

  1. Brown the meat: In a large pot, heat olive oil over medium-high heat. Add ground beef and cook until browned. Drain excess fat.
  2. Sauté vegetables: Add onions, bell peppers, and garlic to the pot. Cook until softened.
  3. Add seasonings: Stir in Carroll Shelby Chili Kit spices and mix well.
  4. Simmer: Add tomato sauce, diced tomatoes, and beef broth. Reduce heat and let simmer for 1.5 to 2 hours, stirring occasionally.
  5. Thicken & Serve: Mix masa harina with a little water, stir into chili, and cook for another 10 minutes until thickened.

Notes

  • Adjust cayenne pepper from the Carroll Shelby Chili Kit for spicier or milder heat.
  • For bean-free Texas chili, omit beans.
  • Store leftovers in the fridge for up to 4 days or freeze for 3 months.
