  • 3 large eggs
  • 1 tsp vanilla extract

Blackberry Sauce

  • 1 ½ cups fresh or frozen blackberries
  • ¼ cup sugar
  • 1 tbsp lemon juice

Instructions

  1. Prepare the Crust:

    • Combine graham cracker crumbs, melted butter, and sugar. Press into a springform pan and bake at 325°F (163°C) for 10 minutes. Cool completely.
  2. Make the Filling:

    • Beat cream cheese and sugar until smooth. Add sour cream, vanilla, and eggs one at a time, mixing gently.
  3. Prepare Blackberry Sauce:

    • Simmer blackberries, sugar, and lemon juice until thickened. Strain to remove seeds.
  4. Assemble:

    • Pour cheesecake batter into the crust. Drop blackberry sauce on top and swirl with a knife.
  5. Bake:

    • Bake at 325°F (163°C) in a water bath for 50–60 minutes. Cool gradually and refrigerate for at least 4 hours.
