Simple Beef Enchilada Recipe

A classic Tex-Mex dish that’s easy to make and bursting with flavor! These simple beef enchiladas feature tender ground beef, gooey melted cheese, and a rich enchilada sauce. Perfect for dinner, parties, or any occasion.

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 cup black beans (optional)
  • 1 ½ cups enchilada sauce
  • 8 small flour or corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish

Instructions

  • Preheat the oven to 350°F (180°C).
  • Sauté onion and garlic in a skillet until softened, then add ground beef and cook until browned. Add spices and mix well.
  • Stir in black beans (if using) and cook for 2 minutes. Remove from heat.
  • Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  • Warm tortillas, fill with beef mixture and cheese, and roll tightly. Place seam-side down in the baking dish.
  • Pour remaining enchilada sauce over the tortillas and sprinkle with cheese.
  • Cover with foil and bake for 20 minutes, then uncover and bake for another 10 minutes until bubbly.
  • Garnish with cilantro and serve.
