  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup okra, sliced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup vegan sausage or tofu, cubed
  • 2 tsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp thyme
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Cooked white or brown rice (for serving)

Instructions

  • Make the Roux: In a large pot, heat oil over medium heat. Stir in flour and whisk continuously until the roux turns golden brown.
  • Sauté Vegetables: Add onion, bell pepper, celery, and garlic. Cook until softened.
  • Add Okra and Spices: Stir in okra, Cajun seasoning, smoked paprika, thyme, salt, and pepper. Cook for 2-3 minutes.
  • Simmer the Gumbo: Add vegetable broth, diced tomatoes, and vegan protein. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  • Serve: Ladle the gumbo over cooked rice and garnish with fresh parsley.

Notes

  • For a gluten-free option, use rice flour for the roux.
  • Adjust spice levels by adding more or less Cajun seasoning.
