Ingredients

Scale
  • 12 oz spaghetti or linguine
  • ¾ lb large shrimp, peeled and deveined
  • 6 slices of bacon, diced
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon butter
  • ¼ teaspoon red pepper flakes
  • Salt and black pepper to taste
  • ½ cup reserved pasta water
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  • Cook pasta in salted water until al dente. Reserve ½ cup of pasta water and drain the rest.
  • In a skillet, cook bacon until crispy. Remove and set aside, leaving 2 tablespoons of bacon grease.
  • Add shrimp to the skillet and sauté until pink, about 2–3 minutes. Remove shrimp and set aside.
  • In a bowl, whisk together eggs, Parmesan cheese, black pepper, and red pepper flakes.
  • Add cooked pasta to the skillet over low heat. Pour in the egg mixture and toss quickly, adding pasta water gradually to achieve a creamy consistency.
  • Stir in shrimp and bacon, then toss to combine.
  • Serve immediately, garnished with parsley and extra Parmesan.

Notes

  • Use fresh Parmesan for the best flavor.
  • Work quickly when mixing the sauce to prevent the eggs from scrambling.
  • Serve hot for optimal creaminess.
